Enzyme systems and matrix behavior

Amano Enzyme displayed three systems with direct implications for fortified dairy and dairy-alternative matrices. CheeseMax PB enables high-protein plant-based cheese by improving protein-stabilizer interaction, maintaining melt and stretch as protein content rises. CoffeeMax is a blend targeting coffee applications. Protein-Glutaminase "Amano" 500 (PG500) resolves separation and curdling in oat milk while stabilizing foam and enhancing creaminess. Each system alters protein crosslinking, which shifts how fat-soluble vitamins partition within the finished matrix and how they degrade under thermal load.

Carriers, sweeteners, and label constraints

The American Dairy Products Institute distributed ingredient bulletins on Galacto-oligosaccharides (GOS) and Whey Protein Phospholipid Concentrate (WPPC), along with updated editions of the Dairy Ingredients Application Guide, Protein Quality Guide, and Permeate & Lactose Applications Guide. WPPC and dairy permeate carry protein-lipid structures that affect vitamin dispersion in aqueous systems and influence encapsulation efficiency for added nutrients.

Adallen Nutrition promoted FP215, a proprietary ratio of Monk Fruit Extract and Stevia Reb M Extract, positioned for sugar reduction in clean-label formats. Replacing sucrose shifts water activity and matrix viscosity, both of which change vitamin degradation kinetics during storage.

Butter Buds exhibited flavor systems targeting clean-label and organic-compliant formulations. Off-note masking for added B-vitamins and minerals becomes a practical requirement at typical fortification levels, where consumer detection thresholds are well documented.

Practical checkpoints

The next IFT FIRST returns to McCormick Place July 11-14, 2027. Before adopting any system shown at this year's expo, verify the following against your specific product matrix: thermal stability across your pasteurization or extrusion profile; carrier compatibility with WPPC, permeate, or starch substrates; and label constraints that limit the co-formulants available to stabilize sensitive micronutrients.
